Parmigiano Reggiano may be considered the finest cheese; but with a drop of traditional balsamic vinegar from Modena or Reggio and accompanied by a red, effervescent Lambrusco wine, it truly seduces the senses. Parmigiano Reggiano is a cheese made from partially skim milk, cooked and left to mature slowly. The aging process lasts at least 12 months or longer. A wheel of parmigiano weighs about 32 kg, given that one kg of cheese requires 16 litres of milk, each wheel is obtained from more than 5 hectolitres of milk, the equivalent of about 700 bottles of wine. This demonstrates the concentration of nutritious elements found in Parmigiano, first and foremost, calcium and phosphorous, indispensable elements which benefit the growth period for children and the maintenance of good health for adults. Since it is also easy to digest, Parmigiano Reggiano is an obvious inclusion in a balanced diet.
