Drink pink, think pink

At my house, there is always some cheese and wine.
I pair fresh DOP Asiago, full fl avoured and regally displayed on a tray, with Biferno Rosato DOC Gironia from the Bargo di Colloredo cellars in Molise on the hillsides facing the Adriatic sea. Gironia is a gleaming blush wine, imbued with aromas of cherries and raspberries. Next to the Asiago: Caciocavallo Silano DOP. I cut it in thick slices and then place them on a grill, hot, but not scorching. From the grill to the plates. And in the chalices: an enchanting Cirò Rosato DOC, obtained solely from gaglioppo grapes, and made by Librandi in Cirò Marina, where the land is pink and perfumed. To complete the trio, on the tray with the other cheeses, ripe Canestrato Pugliese DOP, aged ten months, proudly fl aunting its unique taste and fragrant aroma. And the queen of table olives, La Bella della Daunia IGP, from Cerignola. Completing the pairings, Castel del Monte Rosato DOC, triumph of Puglia, made by the Miali Winery. This wine has the colour of a fresh rose.
