The restaurant’s name has never been changed. From 1757 it has been engraved in elegant gold on the beautiful black glass light. In the 800’s, due also to the daily presence of Camillo Benso Conte of Cavour, strategist in the Unifi cation of Italy, it was in the limelight of the Risorgimento.To the point that on the 26th April 1959, after having refused the Austrian ultimatum and having proudly read the proclamation of war, the statesman and “bon vivant” declared “Today we have made history and now we are going to eat”, gaining unanimous consent from the delegation and ministers of the Italian reign reunited at Palazzo Carignano.
A triumph of mirrors and crystals
Cavour is not with us any more, but in the room dedicated to him, amongst large mirrors that refl ect crystal sparkles into infi nity and golden stuccos that adorn ivory boiseries decorated with palm leaves, you can almost feel his presence. Since 1981 the premises have been under the direction of Amato Ramondetti, nephew of Amato Scavarda proprietor of the Cambio between 1912 and 1933, and current president of the Compagnia Turin Hotels International who, as well as wanting to celebrate himself, wishes on this occasion to pay homage to the city. Reliving its glossy past the Ristorante del Cambio, member of the Association of Historical Premises decorated in January 2000 with the prestigious 5 Star Diamonds award, looks to the future and offers a balanced alternative of tradition and innovation. Proud to be a reference point for who, just arriving under the Mole, steps over the threshold to sink into one of the crimson coloured sofas framed with huge corbeilles of fresh fl owers, Il Cambio knows how to go with the fl ow of modern times.
