Just make it the province of Bolzano, on the Renon or in the vales of the Dolomites, in Merano, the Val Ventosa, Bressanone or in Pusteria as far as the border with Austria, and you will fi nd it everywhere.

In the rustic masi and in the most elegant pastry shops, in recommended restaurants and in high altitude mountain refuges. Everyone loves strudel and it particularly wins over even those who dislike puddings that are “too sweet” like creamy desserts and sponge soaked in liqueur. The name strudel means “gorge, vortice, spiral” and refers to the gestures that create it: wrapping a fi lling spread out on a layer of fi ne rolled pastry. Strudel is a myth, proved so by the fact that it boasts a regional label as one of the “South Tyrolean products of utmost quality”.
