Immaculate Perfection
Vino Magazine: July 2008
How can we pour the wine for our guests without ruining the perfection of the spotless new tablecloth chosen especially for the occasion? The market today offers different types of solutions for preventing this type of inconvenience: from practical silver coloured discs to place on the neck of the bottle to pouring spouts, from metal clamps in every shape and form to napkins to tie around our Bordeaux. But what are the “official ” rules for obtaining full glasses and clean tablecloths? The sommelier’s manual give few but precious tips on the manner in which to serve the wine: “the contact with the client and the serving of the wine must be carried out with careful attention and precision, with simplicity and composed movements, without an over fussy manner. Professional corkscrews, 2 plates, a paper napkin and a tasting glass are the necessary instruments for successfully opening a bottle of wine”. We have our service napkins which help us to wipe the corks and pull them out without touching them with our hands and to remove any possible traces of cork without dirtying the napkin while we pour the wine.
