It is a special type of brandy produced exclusively in the adjacent region to the homonymous French city. It adheres to the severe restrictions imposed by the BNIC - Bureau National Interprofessionnel du Cognac - an organisation that oversees all the production phases and supervises the protection and promotion of the Cognac name.The selection of provenance is extremely strict: only certain types of singular white wines can be used and the distillation is carried out twice with copper alembics. The maturing process (at least 2 years) must take place in oak barrels. The final product is a distillation with an alcohol content equal to approximately 40% and is usually blended with other distillations of the same type but of different age and origin. Quality cognac has an amber colour with a flowery aroma and a velvet taste
